Short Ribs on the GMG Ledge
One of our favourite things at Marketplace is doing a long, slow smoke on the GMG Ledge or Big Green Egg. It's an ideal activity for the weekend and depending on the time you plan to serve up - it doesn't necessarily mean an early start to the day.
For these short ribs however, we wanted a late lunch, so it was a 6am start to give them the 6-7hr smoke they need.
Everyone does it different, but I personally prefer my ribs smoked to the point just before they fall off the bone. I like the meaty texture and this meant a fairly high, late temp before the ribs rest for an hour.
Because of the rich fat content of short ribs, we recommend pairing them with something tart like a non-creamy slaw (soaked in apple cider vinegar is good) - or if you can get them - some of Rickles Pickles.
Throw everything inside a milk bun, squirt on some tangy BBQ sauce and you're looking at a very pleasant afternoon nap in front of some mindless TV.
